Vegan Aioli Recipe

This aioli is undoubtedly our most requested recipe – and with good reason

It takes less than three minutes and tastes simply AMAZING!

We get asked for the recipe almost without exception when we serve this aioli. Whether with empanadas, homemade burgers or paella, it complements every dish and gives an extra kick.

You only need a few ingredients and you can prepare it faster than you can buy it in the supermarket. And the best thing about it is that it keeps in the fridge for up to a week without any preservatives. Although in our house, by then it’s long gone 😉

What you need

  • Upright blender with opening in the lid for oil
  • a love of garlic!

  • Lemon or vinegar, a generous dash
  • 250-300ml unsweetened Soy milk
  • 1 garlic clove, peeled
  • Sweet paprika
  • 1 dash of mustard
  • Salt and pepper
  • Sunflower oil (any neutral tasting oil works fine)

Lets get started:

Combine the soy milk with the lemon or vinegar in the blender and blend on high for a couple seconds. Then add everything except the oil, put the lid back on and blend on high until the garlic is completely broken down. Pour in the oil, slow and steady, with the machine still running. You will notice the tone of the machine changes all of a sudden once the Aioli has thickened. And it’s as simple as that.
